Dandelion Honey

To the nose, this dandelion honey carries a pungent aroma of sulfur, ammonia and vinegar, with notes of wet hay, aromatic root and cheese rind. To the palate it is moderately sweet, vanilla-scented, and with a distinct note of chamomile infusion. It has a uniquely double personality in the dichotomy between its olfactory properties and flavor.

How to consume
It is excellent with bitter leafy greens like endives and kale. It can be used to glaze pork, for roasting or grilling. It can be emulsified with vinegar, extra virgin olive oil and black pepper to garnish roasted or grilled meats.
