VINIFICATION:
Destemming and pressing followed by spontaneous alcoholic fermentation using indigenous yeasts in contact with the skins in temperature-controlled steel tanks. Dry racking and racking.

MALOLACTIC FERMENTATION:
Completely carried out immediately after alcoholic fermentation.

REFINEMENT:
Filtration and bottling, then rest in the bottle at a constant temperature of 14°C for a month before being released for sale.

CHARACTERISTICS:
Very drinkable, it features subtle tannins and a rich fruitiness. Aging enhances the purity of the Nebbiolo grape. It is best enjoyed within the first five years in the bottle, when its aromas of rose and small red fruits fully develop. Serve at 16-18°C.
