This red tuna is a product obtained from the fattest part of the delicious bluefin tuna: the one that surrounds the abdominal cavity. The ventresca differs from other parts of the tuna for its particular richness of fat, which makes the meat soft and tasty. This Mediterranean product is processed by Sarda Affumicati according to the ancient tradition of Buggerru’s region, with the addition of salt and olive oil and about two years of seasoning.
