We only use Italian Tripe for this authentic traditional dish. Adding pecorino, parmigiano  and mint is the proper way to enjoy Trippa alla Romana. This ready to eat dish can be consumed just as it is with additional seasoning as suggested or can be used as a pasta sauce!
